Territory
Nocellara del Belice is a highly prized cultivar and is, among the native Sicilian cultivars, probably one of the most estimated. This cultivar is dual-purpose, excellent both for the production of extra virgin olive oil and for table consumption, thanks to the very large size of the drupes. Very widespread in the province of Trapani, it is also cultivated in many other areas of the island, such as Agrigento, Palermo and on the eastern side.
Plants
The Nocellara del Belice plant has medium vigour, a pendulous bearing and an averagely expanded foliage.
Olives
Nocellara del Belice Olives tend to be spherical and symmetrical in shape, with a rounded base and the presence of an umbo. They are very large olives, often weighing more than 6 grams. The surface is also pointed with large lenticels that are not numerous. The ratio between stone and pulp is very good, this characteristic makes the Nocellara del Belice an excellent table olive.

Smell
It is characterised by its medium-intense herbaceous fruity, with notes of artichoke, tomato and almond.
Taste
On tasting, it presents an aftertaste of tomato, artichoke and almond. Bitterness and spiciness are of medium intensity and well balanced between them. Ideal on both raw and cooked fish, but also on legume soups, grilled red meats and all vegetable dishes. It can also be used for short cooking at high temperature and for frying, thanks to its high smoke point.
